Quick Pasta with Shrimp, Feta and Merlot
2 tablespoons olive oil
1/4 cup MC Merlot wine
1 glove garlic, minced
1 cup small cooked shrimp
1 lb. feta cheese , crumbled
6 green onions, finely chopped
1 cup fresh basil
4 fresh tomatoes, finely chopped
1/2 teaspoon sea salt or kosher salt
1/4 teaspoon white pepper
1 16-ounce package any pasta
Instructions:
In a large bowl, combine olive oil, MC Merlot, garlic, shrimp, feta cheese, green onions, basil, tomatoes, salt and pepper. Stir well to combine, adjust seasoning to taste, and let stand at room temperature for at least one hour.
Prepare pasta to package directions; drain well.
Add hot pasta to sauce and toss. Serve immediately.
